Material
There are two parts to this recipe – the marinade and the vegetables.
Sauce – This sauce is very similar to my summer roast.
Extra Virgin vegetable oil – you’ll also use regular vegetable oil or any neutral tasting oil
Balsamic Vinegar – This adds a bit of sweetness and aroma to the vegetables
Minced Garlic – Garlic makes everything better. You can use garlic powder but I recommend using fresh garlic.
Dijon Mustard – To emulsify vegetable oil and vinegar. Plus, it brings a bit of saltiness.
Italian Herbs and Black Pepper – I find these to be effective with any summer vegetable but if you don’t have an Italian herb blend you can use a thyme combination. dried, basil and marjoram.
Vegetables – I’m using the “classic” summer vegetables (soft veggies) you see in root vegetables.
Bell peppers – for a sweet crunch and festive color (I prefer red and yellow bell peppers)
Zucchini – Zucchini just called summer to me!
Yellow squash – Another summer vegetable with a mild flavor! You can skip this and use more zucchini or the other way around.
Cranberry Mushroom – I like this mushroom meaty but if you can’t find King Oyster mushrooms you can use regular button mushrooms.
Purple or yellow Onions – I used both in this recipe.
How to make Delicious Air Fryer Roasted Vegetables
Prepare your vegetables. Cut them into similar sizes so they will cook relatively well at the same time. Please note that the vegetables I used in this recipe are the tender vegetables that you will use to make the root vegetable dish. If you are using hard vegetables/vegetables, you need to adjust the cooking time (longer cooking time) for the vegetables to cook.
Prepare the marinade in a large bowl.
Mix the vegetables with the marinade. Use your hands to make sure the sauce coats the vegetables evenly. This is only enough marinade to coat all the vegetables.
Cook in the air fryer at 400F for 13 to 15 minutes. I cook vegetables in two batches. I have a Cosori 5.8 QT air fryer. If you have a smaller size air fryer, I recommend cooking/”grilling” your veggies in 3 to 4 batches.
